Turkey & Vegetable Stir-Fry
Serves: 4
Ingredients:
- 2 tbsp chinese chili paste with garlic
- 3 cups (3 stalks), sliced bok choy
- 1 cup fresh shiitake mushroom caps
- 2 cups cooked; cubed or shredded white turkey meat
- 2 tsp olive oil
- 3 cups (1 large head) broccoli florets
- 2 tsp Soy Sauce
- 1 tbsp or distilled white vinegar rice wine vinegar
- 4 cloves finely chopped garlic
- 2 tbsp finely chopped fresh ginger

In a small bowl, stir together chili paste, vinegar, soy sauce, 2 tbsp. water; set aside. Heat oil in a wok or large skillet over high heat. Add garlic and ginger and stir-fry until fragrant, about 30 seconds. Add broccoli and bok choy and stir-fry until the broccoli is bright green, about 2 minutes. Add shiitakes and stir-fry until softened, about 1 minute. Add turkey meat and stir until heated through. Add the reserved chili-paste mixture and stir until slightly thickened, about 1 minute. Serve immediately.
