Mandarian Beef with Tomato!
Serves: 4
Ingredients:
- 1 cut 1 inch thick beef sirloin steak
- 1/2 cup low sodium teriyaki sauce
- 2 tsp cornstarch
- 1 tbsp MCT or Flax Seed OIL
- 2 cups fresh snow peas
- hot, cooked rice
- 1 medium cut into 1/2 inch wedges onions
- ground black pepper
- 2 medium cut into 1/2 inch wedges tomatoes
- 2 tsp minced fresh ginger

Cut beef across grain into 1/8 slices and 2 inch pieces. Combine teriyaki and ginger in large bowl. Toss beef with teriyake mixture. marinate for 10 minutes. Drain beef, keep the marinade. Combine marinade and cornstarch. stir until smooth. Heat wok or large frying pan over med heat until hot. add oil and heat 30 seconds. Add half of the beef, fry 2-4 minutes and remove. Add the remaining beef. Add small amount of oil into wok. Add onion, cook until browned. Add snow peas, fry 3 minutes for fresh or 1 minute for frozen. Stir marinade until smooth and add to wok. Fry 30 secondsuntil sauce boils and thickens. Return beef and any juices to wok, along with tomatoes. Heat through. Serve over rice.
