Pressure Cooker Chicken Fricassee

Ingredients:
  • 1 Tbsp olive oil
  • 1 3lb cut into 1 inch pieces chicken
  • 3 cut into 1 inch pieces carrots
  • 2 cut into 1 inch pieces celery ribs
  • 1 cut into wedges onions
  • 2 Tbs. whole wheat flour
  • 1 Cup low sodium, low fat chicken stock
  • 1 Tbs minced fresh chives or parsley
  • Nutritional Information:
    The recommended wines are: White Zinfandel, Zinfandel, or Merlot.
     
    Preparation:
    In a small bowl, stir together chili paste, vinegar, soy sauce, 2 tbsp. water; set aside. Heat oil in a wok or large skillet over high heat. Add garlic and ginger and stir-fry until fragrant, about 30 seconds. Add broccoli and bok choy and stir-fry until the broccoli is bright green, about 2 minutes. Add shiitakes and stir-fry until softened, about 1 minute. Add turkey meat and stir until heated through. Add the reserved chili-paste mixture and stir until slightly thickened, about 1 minute. Serve immediately.
